Country Of Origin: Georgia 🇬🇪

The national dish of Georgia, Khachapuri is a cheese-filled bread that can be found in many different variations throughout the country. "Khacha" which means curds and "puri", which means bread, this dish's name really represents exactly what it is. Leavened bread, shaped in different ways, filled with cheese (usually Sulguni, a Georgian variety) in the middle and the crust of the bread is then ripped off and dipped into the center. Eggs are also commonly used as a filling. Khachapuri is popular in many other post-Soviet states, particularly Russia & Armenia, as well.

Fun Fact: As the country's national dish, UNESCO has decreed that it is in fact part of Georgia's intangible cultural heritage. It is cooked so regularly that the International School of Economics at Tbilisi State University has devised its own Khachapuri index as a measure of inflation.

History: It is thought to originate from the Lazi people, who were sailors. Khachapuri is a certain representation of the boat, sea and sun.
